I think it's safe to assume that we can all do better with eating more raw veggies!
Here is a recipe for an AMAZING Carrot Walnut Meat for a delicious Kale Burrito!
Carrot Walnut 'Meat' (3-4 servings)
1 cup grated carrots (1 carrot)
1/4 cup raw walnuts
1/4 cup marinated artichokes (in the jar, and drained with no liquid)
2 tbsp pumpkin seeds
1 tbsp ground flax seeds
4 sundried tomatoes (the one packed in olive oil but without the oil)
2 garlic cloves
3 garlic stuffed olives (or regular olives)
1/4 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp nutritional yeast flakes
1/2 tsp dried oregano
1/2 tsp dried basil
Salt to taste
*a splash of water if necessary
1. In a food processor, pulse all of the ingredients until the form a uniform paste.
2. Salt to taste
1. Massage your prepped kale with lemon juice, salt, a bit of honey, a sundried tomato and za'atar. The oil from the sundried tomato will help in the massaging process (and also add flavor). I also added pickled red cabbage to the kale.
2. Warm your wrap (you can find alot of raw wraps or gf wraps at @wholefoods @sprouts or other specialty markets)
3. Prep your veggies (I used cucumber, peppers, tomatoes, and a homemade kimchi) and dress them with a little lemon juice and salt
4. Assemble by adding all of your ingredients. (I also added guacamole and sunflower microgreens )
5. Wrap in plastic wrap or parchment paper bc things can get messy without it
6. Enjoy!
